The ubiquitous crust. You'll recognize it everywhere - slapped between two-ends of a sandwich, from the elegant thin crunch for soaking or dunking to the most decadent cake, some type of bread or basic carb (including rice, dummies) is universal across all cultures of the world. Yes, we know there is a 'Mediterranean diet,' but most of those guys cheat or give up anyway.


What do all these bread-eaters have in common? We'll tell you: A lack of simple, practical solution to accompany that carb without being boring or easily gotten sick of -- until now. Introducing the one-pot wonder, VEGGIE CHILI. When it comes to eating well, it checks all the boxes: 1) healthy and nutritious. 2) is practical - i.e. not extravagant or difficult to make, is cheap, lasts well in fridge, feeds many, etc. and finally 3) tastes at least okay and is not too cloying.


Chili is like the unsung Cinderella of that awful step-family of Tex-Mex cuisine. Hidden under the spotlight from her Stepmother Burrito and her evil sisters, Chalupa and Taquitos, chili has got a bad rep for being a glorified meat-sauce. But take away the meat -- add some spices and a nuanced selection of veggies and lentils, and you've got yourself a miracle dish that pairs well with basically everything. Behold--


- as a dip or a soup, to any kind of bread.

- enjoy by itself like a stew, or garnish with sour cream and cheese.

- pair with any kind of rice dish, like a curry or a hefty powerhouse side.

- leftovers? Throw chili over it. The chili does not fear--the immortal spirit of chili accepts and absorbs all into itself.


In case you didn't already know, modern scientific research / academic studies are dead. The august institution we know as the modern university, after about 250 years of institutionalizing, has rotted whatever leftover integrity of its founding mission to sell whatever result to whatever interest. (Do people not notice this? That you can find 'study show from _top university name_ ...' for or against anything...?*) This, coupled with insidious ties across industries --pharma, healthcare, media, agriculture, etc --the most prevalent data on nutrition or health is basically whitewashed at best, if not perverted entirely. So really, this recipe is not just a recipe, but a commentary on some of the most honest studies on this subject that we ourselves think worthy of trust.


Anyway, back to chili. Admittedly we can't write home about the flavor (we wouldn't lie to you) as it is low in fat, sugar and salt, the three basic constituents of all mouthwatering food. But the texture? Exquisite--warming--filling--wholesome.
